Albacore Cupcakes
We're 100 miles offshore for 3 months. More often than not, Mother Pacific is intertaining us with her customary 5' to 15' swell. The Fishing Vessel GOOD NEWS, is strong but small, she confidently bounces us from swell to swell, day after day and all she askes in return is we keep her belly full of fuel. Easy enough for GOOD NEWS, but the crew needs a full belly too, and it's a somewhat challenging environment to pepare and consume a decent meal. Think of it like making a sandwich or warming up soup on a roller coaster.
Quick, Portable, Delicious, and Healthy, these Albacore cupcakes work perfect for a snack or lunch on the go, and pack a hearty boost of protien power to keep all your deck-hands working with a smile! Easily made ahead of time and taste great hot or cold.
Ingredients
- 1- 8oz. pouch of GOOD NEWS TUNA ©
- Pub rolls or a good hearty bread of your choice (we opted for a onion roll on this one)
- 1/2 cup Red Onion Julienne or Diced
- 1/4 cup chopped Cilantro
- 2 eggs
- 1/4 cup Jalapenos
- 1 meduim baked sweet potato
- Red Pepper flakes to taste
- Salt & Pepper to taste
Optional Frosting
- 1- 8oz. package of cream cheese
- 1/4 cup grated Gouda
- 2 cloves garlic
- 1/4 cup Cilantro
- Juice of 1/2 lemon
- Blend lemon, garlic, cilantro till smooth and add into melted cheese
- Divide and poar evenly over the cupcakes when they come out of the oven
Assembly
- Combine all the ingredients and mix well
